What Have I Been Cooking?

I’ve been working on a new project for a few weeks now and I couldn’t be more excited about its unveiling! So if you’ve been wondering why I haven’t been posting, it is because of this project! I honestly wasn’t sure what I was going to be posting about today, but I’ve been cooking a lot more lately. I’m not sure why, but who doesn’t like a nice home cooked meal?

Lately, I’ve been loving these Black Bean Burgers that I found on Pinterest. I never really follow the complete recipe because I’m such a rebel and all. All I do is chop up some onions and peppers and put them in the food processor and strain the liquids. Then I smash up some black beans with a fork and add a beaten egg.

I add the veggies and beans together and form balls and then flatten them. After those somewhat tedious steps, I put them on a grilling pan until they’re fully cooked. I always like to slightly burn them so that I get a slightly crispy texture. Of course, black beans are soft, so they have the tendency to fall apart – be extra careful!

I think these are a great alternative to a beef burger if you’re like me and don’t eat a ton of red meat all the time. Also, beans and veggies are pretty healthy if you ask me.

Something that I actually cooked today and I think I’ll cook more often since it’s so easy is…Orange Chicken! Of course, mine is gluten-free. Instead of using flour, I used cornstarch – which also works as a thickener for the marinade. The sauce contains, orange juice, soy sauce, vinegar, brown sugar, orange zest, and garlic.

I was quite surprised at how great this came out. I would prefer a little more crunchiness, but next time I’ll just use a gluten free flour to get that texture. I will also add a little less orange zest, because I may have over did it just a tad.
